Birth of Boiled Baby Sardine
About 40 years ago, people were mainly eating dried fishes which mostly has hard texture. However, some of the customers requested them to produce something more softer. After all experiments Takagi Store invented way to produce soft boiled baby sardine.

Strict part of baby sardine production is starting from choosing the baby sardine. They never uses frozen baby sardine. Minimize the time for transportation and storing. Right from the market to the store and wash, take all small crabs, squids, and shrimps from the bags, appropriate amount of salt and time for boiling. All those techniques from previous owner kept passed on to current generation, and now they are keep trying to make baby sardine better for another day.
